Idli is a kind of bread eaten largely in the Southern region of India. Idli is a very healthy and light on stomach bread made from semolina and yogurt and can be consumed anytime of the day, in breakfast, lunch or dinner.
In order to make delicious soft idlis you need:
1 cup semolina (sooji/rava)
1/2 cup whipped yogurt
3/4 cup water
1 tbsp vegetable oil
1/4 tbsp rye
1 tbsp salt
1/2 tbsp cumin seeds
1/2 tbsp baking soda
Now, it is very simple, mix semolina with yogurt by adding semolina in small amounts in order to avoid any lumps. Add water to make the mixture viscous enough. Add all other ingredients saving baking soda for the last and mix well.
Allow some water to boil in the idli maker. When the water comes to a good boil, grease the idli maker plates and pour 1 ladle of batter in each idli case. Allow the idlis to get steamed for about 5 minutes and then take them out of the steamer. Allow them to cool for a min and then take them out from the cases one by one using a knife.
Your soft, fluffy and delicious idlis are ready to be served hot!
