Nothing beats the akka South Indian food. No matter where you live in the world, its magnetic aroma and rich flavors can make you hunt for a South Indian restaurant even if you are in Italy 😀 I know that’s too much exaggeration in praise of akka Indian food. But no kidding, our food is relished by both Indians and foreigners alike.
So here I present to you a very interesting easy to make authentic recipe of South Indian ‘Idli Sambhar‘.
For making tasty sambhar you need:
1 cup chopped bottle gourd (ghiya/lauki)
1 cup chopped cabbage
1/2 cup beans
1/2 cup chopped carrot
1/3 cup tur dal
For seasoning you need:
2 tbsp vegetable oil
1 finely chopped onion
1 pinch asafoetida (hing)
1 tbsp mustard seeds
1 1/2 tbsp fresh curry leaves
2 finely chopped tomato
2 dried red chilies
2 tbsp sambhar powder (I use MDH or Eastern sambhar powder)
1/2 tbsp red chili powder
50 g tamarind paste
Salt to taste
Boil all the vegetables and dal with 1 tbsp salt and 1 tbsp sambhar powder in a pressure cooker.
Take vegetable oil in a big pan and allow it to heat for a minute. Add finely chopped onion and roast them till they turn golden. Add asafoetida and mustard seeds. Stir well till the mustard seeds come to crackle. Now add chopped tomatoes and cook them till they become soft. Now add curry leaves, dried red chilies, sambhar powder, red chili powder and salt to taste. Allow the seasoning to cook for 1/2 a minute and then transfer the boiled contents from the pressure cooker to the pan. Finally add tamarind paste to the mixture. Allow the sambhar to cook for another 20 minutes but don’t forget to stir it after every 3-4 minutes.
