Hello my dearest friends! Like I said in my earlier post dated March 3, 2015 about sharing some quick-to-cook recipes for beginners, today I am sharing with you all a very simple yet healthy and tasty recipe of ‘Lentils Pasta’.
There are many ways of cooking pasta. Depending on the people’s taste and geography the recipe of cooking pasta varies. Some cook it in white sauce (cream) and others cook it in red sauce (tomatoes) and there are some optional ingredients including vegetables, cheese, etc.
Lentils pasta is no special kind of pasta but the one with lentils in it, lots of vegetable and some mozzarella cheese. Lentil is a rich source of proteins.
Let us quickly look at how it is made.
Take about 1 cup pasta in a pan and add 2 cups of water, and add ½ tbsp. of salt and 2 tbsp. of either refined vegetable oil or olive oil. Then half boil pasta, ensure that the pasta is not over cooked. To test whether your pasta is not over cooked, scoop out a piece of pasta on a fork and bite it, it should have little crunch left on it. Now, drain all the remaining water using a strainer and cool the pasta under cold running water.
While your pasta was boiling, you could take some soaked lentils in another pan and add water and some salt and leave it boil. Once your lentils are boiled, drain all the frothy water from it.
Slice some onion, tomatoes, green chilies and red/green bell pepper. You may also cut some pieces of broccoli and artichoke hearts. Adding boiled sweet-corns will give a subtle sweetness to your dish.
Take about 2-3 tbsp. of oil in a pan and sauté the sliced onion, then add all other vegetables in it. Add about 1 cup of tomato puree and ¼ cup of butter. Add red chili powder, black pepper powder, salt, basil and oregano as per your taste. You may also go for some fresh parsley leaves but that’s completely optional. Allow this to cook for a couple of minutes and then add both your boiled pasta and lentils to the pot and mix all the ingredients well. Allow the pasta to cook in the tomato puree for a couple of minutes and that’s it.
Our very tasty and healthy pasta is ready to be eaten. Wait, if you’re a cheese lover then garnishing your dish with some grated mozzarella cheese will only enhance its taste. Go for it friends and then write in comments how it went!
