Thai Curry Recipe| Vegetarian Thai Curry Recipe

Today’s recipe is a treat to all the ‘Thai Food Lovers’ as I am going to dish out the recipe of super delicious and spicy ‘Thai curry‘.

The cuisine Thai curry is a result of influences by Thai, Indian and western style food. A Thai curry is essentially made using vegetables, coconut milk and curry paste made from fresh herbs (and not spice mix). Coconut milk is the key ingredient which is majorly responsible for its Thai taste.vegThai Curry

Today I am going to give you that version of Thai curry which is easy to cook at home with all the ingredients readily available. Below are the ingredients that you will need to procure Thai curry paste:

  • 4-5 lemon grass
  • 5 Green chilies
  • 1 inch ginger root
  • 6-7 basil leaves
  • 1 tbsp coriander seeds
  • 5 black pepper corn
  • 1 large onion roughly chopped
  • 3 cloves of garlic
  • 1 tbsp vinegar
  • 1 tbsp soya sauce
  • Salt to taste

Put all the above ingredients into a grinding pot and grind it to form a fine powder.

For making curry you will need:

  • 400 ml unsweetened coconut milk
  • 3 tbsp green curry paste (prepared in the above step)
  • 4 broccoli florets
  • 1 carrot (sliced)
  • 1 red or green bell pepper (diced)
  • 3-4 baby corns
  • 1 cup water
  • 1 tbsp brown sugar
  • 1 tbsp oil
  • 6-7 roasted cashew nuts


Heat 1 tbsp oil in a wok and then add green curry paste to it. Roast the paste for a good minute and add water, coconut milk and sugar to it. Allow the mixture to boil once and then shove in all the vegetables as said above into the wok along with roasted cashew nuts. Cook for 15 minutes till the vegetables get softened. Your yummy sweet and spicy Thai curry, cooke at home by YOU, is ready to be served hot with sticky boiled rice!
