The Famous Puri-Aloo Bhaji’s Recipe

 

Puri-aloo bhaji is a famous North Indian cuisine which needs no introduction. It is a commonly savored food on a holiday morning. Moreover, there is only little preparation required to make this ever delicious ‘puri-aloo bhaji‘ with the use of minimal ingredients.

So let us get started. I shall be very quick in telling you the ingredients. You will need

  • 1/2 kg par boiled potatoes
  • 2 big tomatoes, finely chopped
  • 1 inch ginger, finely chopped
  • 2 green chilies, finely chopped
  • 2 to 3 spoons refined vegetable oil
  • 1 teaspoon (tsp) red chili powder
  • 1/2 tsp all-mix-spices
  • 1/2 tsp turmeric powder
  • 1 pinch asafoetida
  • 1 tablespoon cumin seeds
  • 1 tbsp chopped fresh coriander
  • Salt to taste
  • Water as per requirement

Heat some oil in a wok, add 1 pinch full of asafoetida and 1 tbsp cumin seeds. Allow the cumin seeds to crackle. Cook chopped tomatoes till they soften. Add ginger, green chilies, and all other spices. Add roughly crushed par boiled potatoes and release some water (say 1 glass water). Add salt as per taste. Now, allow the bhaji to cook for good 10 minutes. Once it is thoroughly cooked, garnish it with chopped fresh coriander.
